Recipes of the world: Chicken Kebob

A classic and quick Arabic cuisine that’s easy to prepare.


For the kebab:

  • A chicken breast cut into very thin strips
  • a clove of garlic
  • A small onion
  • Extra virgin olive oil
  • Half lemon
  • cumin
  • Salt and pepers
  • Leaves of lettuce and a tomato cut into thin slices.

For the tomato sauce:

  • Two crushed tomatoes
  • Extra virgin olive oil
  • A teaspoon of soy sauce
  • Spices: Salt, ground black pepper, oregano
  • Brown sugar or honey,Ground cumin and cinnamon.

For Yogurt Sauce:

  • A Greek yogurt without sugar
  • A spoonful of virgin olive oil
  • Two tablespoons of lemon juice
  • A tooth of grated garlic
  • Spices: a pinch of sugar, cumin, curry; salt and pepper.
  • Finely chopped parsley


  • Poke the onion chopped in julienne and add the chicken into a pan over medium heat.
  • Stir until the meat is browned and then add the garlic, salt and lemon.
  • Heat for about 10 minutes over medium heat
  • To prepare the kebabs, open the pita bread in half without separating the whole two parts.
  • Insert the cooked chicken, the lettuce cut into strips and the tomato thinly sliced.

To prepare the tomato sauce:

  • Fry the tomato crushed in virgin olive oil.
  • A few minutes after starting the cooking, lower the intensity of the fire and add salt and sugar.
  • Leave to cook for about fifteen minutes and add the soy and spices.
  • Continue cooking for about five more minutes.

To prepare the yogurt sauce:

  • Mix the yogurt with the oil and the lemon juice.
  • If you want a softer texture, you can add a good spoonful of mayonnaise.
  • Season the garlic and add chopped parsley.
  • Then add spices to taste.
  • Put it in the fridge for half an hour to cool and gel together.

Additional Tips:

To make the pita bread crunchy, you can lightly moisten it and place it in the preheated oven at 220 degrees for a couple of minutes. The result is worth it. Enjoy!
